Help with coconut ice

Afternoon everyone,

I've just tried making coconut ice for the first time, and I'm not sure that it's quite worked.

Here's the recipe:

225g caster sugar
75ml milk
75ml desiccated coconut

Then the same again, plus red food colouring

Dissolve the sugar in the milk and bring to the boil. Then boil gently for 10 minutes. Remove from heat and add coconut and put in greased tin to cool.

Repeat for top layer add red food colouring to make it pink.

I've just done the first layer, and I took it off the heat early, because it started to brown, and the milk evaporated, so the mixture cooling with the coconut in is what looks like brown sugar and coconut pressed into a tin. Now I know it's usually white when I buy it, so have I overcooked it? Should the coconut be added to a wet mixture rather than a dry one?

Any tips on timing would be appreciated. I may bin the attempt and try again because it doesn't look right, and may forget the second layer for now.

  • I've never made coconut ice by boiling milk and sugar - I normally just stick to the no-cook versions because it's tricky not to scorch the milk and sugar. I found this recipe, which is similar to what I normally do, just mixing condensed milk, icing sugar and the coconut together :)

    I think I have probably scorched it, so I'll bin it and get some condensed milk tomorrow. Thanks for the recipe. :T
