Just back from Spain - face masks are still compulsory on public transport and taxis. Not sure about pharmacies - but I think that is still the case.0

We used both the Monzo and Chase debit cards without any problems. My wife is currently using my Monzo card in Majorca and gets a discount for using a card for bus travel. I presume this could apply in other parts of Spain. From the transactions appearing on my phone it is being used all over the place!
The exchange rate is as good as it gets.
Ideally get a Starling card if you want to make a lot of atm withdrawals but be aware that Spanish banks typically charge 4 to 6 euro every time you withdraw cash.
You probably won't be able to get a Chase card due to the backlog of applications at the moment.
All these debit cards are in GBP so can be used at home. Note - all these accounts need a smartphone to operate them.
Finally, and off topic, make sure you have your NHS Covid Travel certificate. They don't always ask for them in mainland Spain airports but they certainly did in Majorca.
Have a nice holiday.1 -
