Unusual situation

Hi, I am wondering if any brokers can ease my anxiety. Put in a Natwest mortgage application late April and was approved a few days later. Not borrowing top end of what we could and declared at the time that my missus is starting a new job. She previously worked in the same role/industry, but found something temporary whilst we moved to my parents and saved. She had a job offer in March in the area we are buying, start date June 1st. All of this was declared on mortgage application including providing job offer letter.
She’s now in role, and we are at exchange and completion. On requesting funds from lender, solicitor said they are missing a document. Spoke to broker, turns out they are now asking for further proof about new role. She’s in role, so we sent an updated confirmation. Important point is amount borrowed isn’t at top end of my salary/her old salary & her new salary is 20k higher. They’ve now requested a payslip which she won’t have until end of the month.
Broker has contacted a BDM about it, saying it’s not right because the mortgage application was approved with the information declared. I’m so anxious we will lose the offer and subsequently the house because of this. Anyone able to give me a true take on this?

Might it be worth offering a letter from her new employer confirming her employment has commenced and the salary she is on?

Thanks for replying. This is what we sent on Friday after broker spoke to lender. Now they are asking for a payslip.
