Best time to book hotel in England ad cheapest site on the whole

We have a weeding in August and a party in Brum over two sperate weekends. One is before the BH and the other is the weekend before
One is a Friday night stay and the other is a Sat night stay.

Ideally a nice double room with breafast and free, onsite parking.

Should we book nearer the time or before. We've not booked a hotel for years in the UK
