My husband works for Greene king and he will be leaving shortly. He has gone into minus figures on his holiday allowence. He has used more then he has earned. His pay wasn't great this month due being away and he didn't put alot of holiday in to cover this time away but I don't know how they allowed him off.
Anyways so I know they will want to recover that money for paid holiday that he has overtaken. So can I ask if anyone know how they will do this? Also they send a letter to let us know.
I just want to plan for it.

He can ask them if they are willing to accept instalments but they are not obliged to agree. To be honest, it was as much his responsibility as theirs to keep track of how much holiday he has used, particularly if he had it in mind to resign before long.
It'snormal that you are allowed to take leave even if you haven't yet 'earned' it - in the first year of employment an employer ccan require people to accrue the leave before taking it, but after that you are entitled to it from the start of the holiday year, so if you leave part way through and have chosne to take time off then you can, as your hsuabnd has, end up owing them for the overpayment when you leave.
He has a pay tomorrow and that covers until end of may and then imagine he would get a pay slip next month for the last few days.
We have the money to pay it back just never been in this situation as I usually had zero or holidays pay owing to me as I accured them.
Yeah I get it that the system doesn't know he is leaving and just take it's off his annual leave and I told him that.
