Mincemeat ideas?

I’ve recently made Mary Berry’s mincemeat loaf cake, but have to say I wasn’t that impressed and prefer my boiled fruitcake recipe

National treasure or not, I find her over-rated.

Although Mary Berry's mincemeat bread and butter pudding is lovely and I'd offer that up as a suggestion to use some of the mincemeat

Bit close to mine pies, I know, but I often make a mincemeat and apple tart - I line a swiss roll tin with pastry then grate an apple or two (depending on the size of the apples) then mincemeat over the top. Occasionally I put pastry stars over, usually I bake it 'topless'.
