Bookkeeping - is tax an outgoing?

Hi, can anyone help by answering this question… I’m self employed, I do my own bookkeeping via excel
for example:
I have £1000 incoming each month
i have £100 outgoing to the taxman each month
do I record the tax as an outgoing?
for example:

do I record the tax as an outgoing?
If I didn’t wouldn’t I be taxed twice?
