Trains, The Meaning of "Break of Journey Allowed"

let's say I purchased a return ticket from Reading to Bristol and the terms state break of journey allowed, does this mean once I have been to Bristol, I can also stop at Bath, have a look around the city then get back on the train to Reading?

In essence, yes, absolutely.
(Depending on the time restrictions on the ticket, it might get a bit more complicated when working out which trains you can use from Bath to resume your journey.)

Sometimes the break of journey is only allowed on the return leg, but this will not be a problem as that is what you are planning. It would be best to show the ticket at the barrier when you get to Bath and explain that you are breaking the journey there. Don't put it in the slot in the gate in case it gets swallowed!
