Im a bit late to the thread as I only post now and again.
About 3 years ago I was given a recipe for microwave dumpling which I initially dismissed however have now made dozens of times, the recipe has been shared across the pond with expats and US/Canadian chums alike and is well used.

    It’s virtually foolproof.

    1/2 pint water
    1 teacup of sugar
3 tablespoons of mixed spice and cinnamon (your choice how to mix)
1/2 lb of stork or margarine
    1/2 lb currants
    1/2 lb sultanas

add all of the above to a saucepan and melt. Once melted boil for 1 minute (stirring in the meantime) before adding
1/2 lb plain flour sifted with 1 teaspoon of bicarbonate of soda and
    2 beaten eggs.

    mix well

line a 2-3 pint mixing bowl/Pyrex bowl with cling film which overlaps the sides and microwave (uncovered) form
    650w microwave- 10 minutes or
    800w microwave- 8 minutes

leave in the bowl to cool before tipping out (I usually leave overnight).

It doesn’t have the “skin” of a proper clootie dumpling but it tastes just fine,  heats well and lasts a good few days (not that it has ever lasted that long!)

Just reporting back that the lemon drizzle cake went down really well. The Americans had never had it before.
It might be a big country but this is an obvious cultural oversight. They can keep their key lime pie, lemon drizzle cake is far superior!

So much to read, so little time.

That's the trouble with reading these threads - after Floss mentioned Cranachan early in the thread , I've succumbed and made some today.
