Pork loin always dry and tough

I’ve picked up another reduced pork loin, the boneless kind that looks like a middle cut from a snake. It’s against my better judgment really as every time I’ve cooked one (usually sliced and fried) it’s been dry and tough. I’ve searched threads on here but get confused as some suggestions seem to refer to pork loin joints…

These seem to be'flavour' of the month.
I see them reduced in Aldi & Tesco.
They seem to be like the pork medallions but not cut up. I think they are labelled 'pork loin fillet' in Aldi

I cut them in half and cook in the oven for no more than 20 minutes. We have been eating pink pork for years and that is definitely how a lot of chefs serve it.
We serve it with a blue cheese sauce.
