the externally stat  , the one attached to outside tank usually with what  looks like curtain wire is  the gas one , what  we do is  set the gas to heat up water at 6 pm that way it  just tops up the solar.
the internal stat in the element is the  solar one so set this a few degrees higher than the gas.
if the solar stat  is wired correctly and working your water should only go to to that heat between 70 and  80
i take it  you have only  a top immersion fitted
if  you can supply picture of immersion with lid off it would  help

Yes, I also think we're at the "need photos" stage.

It is the thermostat in the immersion he is talking about - it is new and ought to be working to cut off the iboost at the desired temperature.

What temp is it set to? 60 is too hot to touch... Needs to be mixed down to less than 45 (which is still too hot for me to shower in).

Nobody knows since the OP hasn't been forthcoming with photos etc.

True, but let's be a little more understanding. The relevant photo of my installation would be extremely hard to see, I've never see it. My installer (effective in other regards) didn't really want to make any changes, just told me everything would be fine. My handyman said that it was impossible to change the settings of immersion heaters, I would have to pay for a plumber *and* an electrician to attend both at the same time. None of this is true, it just makes it not every easy sometimes.

It's also possible that the installer made a complete hash of it and it's been installled without a thermostat, or the thermostat is faulty. Either would be a safety issue and need to be identified.

This is  something  you  need to have sorted out quickly where a  immersion  stat  has  failed without a safety cut out the  hot water then causes the plastic  tank in the loft to split and scalding hot water pours down on any one under.
a decent electrician could solve this in a  few  mins.As the water is too hot it can only  be a faulty ,wrongly set ,wrong length or incorrectly wired stat,
As  stated  before the stat on the tank held on by  curtain spring has nothing to do with the immersion.
whilst not wanting to say anyone is  a fault i wonder if  your installer and handyman were qualified or experienced enough to carry out this work.

Ideally you want the immersion heater stat set high to get as much surplus solar energy into the tank as possible. To avoid scalding fit a thermostatic mixer valve & set it to your desired temperature.
