    This is intended for raspberries but works well with tinned apricot halves & (free) blackberries too;)

    Lightly stew the fruit in a tiny bit of water or juice so that it is soft but still holds it's shape.

    Beat Marscopone cheese with icing sugar to taste & a few drops of lemon juice.

    Layer fruit & cheese spread in oven proof dish (either singular ramekin dishes or a bigger dish for several servings) & top with lots of brown sugar, pop under hot grill until sugar caramilzes, serve immediately. (Beware of serving hot caramilized sugar to children!)

    The down side to this is you can't prepare it in advance because you want the fruit to still be hot when you put the finished dish under the grill, otherwise you get a curious hot/cold effect! The up side its it takes about 10 mins from start to finish.

    Paradise pudding

    Serves 1 (just double or treble whatever for more)

    1. Mix up 1/2 and 1/2 yoghurt and plain soft cream cheese (like philadelphia, can't spell it LOL, I use Lidl's own brand) from memory it's about 25g of each.

    2. Take 1/2 a digestive biscuit and crumble up into the bottom of a ramekin

    3. Add a small handful of fruit (recipe says use grapes chopped in 1/2 but I've used anything chopped up)

    4. Add 1/2 of the yoghurt/ cheese mix

    5. Repeat stages 2 - 4 for a second layer.

    6. Sprinkle a little bit of white sugar on top and pop under the grill for a few seconds so it melts (or use soft brown sugar and put in the fridge for 10 minutes and it will melt)

    This is a weight watchers recipe too taken from their cook book, from memory its 3 points.

    Ooops, just realised you're asking for HOT puddings, this is cold but quite nice for hot summer evenings (If we ever get any)
    When life hands you a lemon, make sure you ask for tequilla and salt ;)

    Many thanks for all the ideas - a lot that I haven't tried before. I would love to walk 6 -8 miles a day like Math and then eat more - this sounds a fair exchange to me! However as a single mum working full time (and I am a teacher so need to bring stuff home as well), I just can't fit this in. I am off for a walk just now between the rain showers.
