Me and my Partner are about to complete 18th March. However, we need to open a joint account is it best to wait until after that date?

We applied for a joint account between application and offer. Didn't think about it before we applied for the account but felt nervous afterwards. There was no issue as the credit check was done before the joint account application and we had no second check. No idea what would have happened if they did recheck. I'd wait and sort it after completion for peace of mind.1

No reason to introduce uncertainty and changes.
Once you have the joint mortgage there is a connection.
