You can get lower power immersion heaters which provide more flexibility. I've installed a 1.5kw immersion controlled by a TP-Link HS110 smart plug that allows scheduling and also records energy consumption.
Haven't used it lately but I have a 230/110V transformer that can supply my immersion circuit.  Hence the element becomes an approx 750W one - well within the 'spare' power available on a sunny summer day

think in long run a immersion diverter would work out  cheaper and  have flexibility to  supply other circuits
