@LotsOfTea I’m intrigued by the canned mixed berries. Where did you get those?
3 -
I got them from Tesco but that was about 5 years ago so I have no idea if they still stock them!
6 -
@JingsMyBucket they sell them in waitrose summer fruits at £1.45 per can. Once the juice is drained, there isn't much fruit.
For the bakers, i tried a fabulous recipe from Nancy Birtwistle, who doesn't mind screenshots. If you have frozen raspberries to use up, i highly recommend this.
You, just use the raspberries frozen, and crush them with a rolling pin before adding to the batter. I used the all in one method, but the video creams the sugar and butter. Makes 9 muffins and add a couple of flaked almonds to the top before baking.

I've made a small amount of progress by using up a bag of pulled fake 'pork' from the freezer over a few days with spicy noodles and stir fried veg. There was a lot of ice in the packet so it had definitely been in the freezer for a while.
I also used up one of the bags of cheapo carrots from the Easter veg offers and made a big pan of carrot dahl with 4 different types of lentils in. We're going to have some for dinner tomorrow and I'll freeze the rest for future me.

I finished up Sunday's couscous with half the remaining sauce from the lamb. The remaining sauce could make a soup with caramelised onions, as per @rtandon27 's suggestion. DH has finished up the Shepherd's pie and the last of a bag of cooking apples from a neighbour whose son has a generous orchard.
I turned some of a pot of live yogurt into a couple of litres of fresh yogurt: if there were room in the freezer I'd be freezing some as a future yogurt starter but right now, it's fridge and freezer Tetris time. As it is, I had yogurt for tea with banoffee sauce and granola.
We went shopping earlier in the week and I bought yet more Easter-priced veg. The parsnips were beginning to turn by the next day so I made soup with them. I think they must have been in the shop over the Easter weekend, and the same goes for the carrots, which are still in the fridge but might be made into carrot and ginger soup. I've bought about three bags of onions, but they are getting used in soups, and weren't as vulnerable as the over-washed root veg, so that's all right.
Yesterday I spotted lamb's liver in the discount section and bought a couple of packs which I've divided up and frozen, and that used the last of the freezer space. We might have some at the weekend with smoked bacon. Yum!

Used some of the Easter veg purchases for Easter dinner - a bag of parsnips, 1.5 bags of carrots and a bag of potatoes. Still have some of the lamb leg left ( was gorgeous - 4 hours slow, low temp roast - literally fell off the bone when I picked it up) but all of the cooked veg and gravy eaten.
Have been away for a couple of days and out for food tomorrow (had voucher for my bday) so not much UU going on. Will get back on it at the weekend 😃

Just when we were getting some fridge space back (I finished the apricot and prune sauce from Sunday with the last of a bag of plain couscous), I spotted whole legs of lamb in L1dl, discounted then half the discounted price. One has come home with me! I will roast it tomorrow then freeze what we can't use fairly soon. The Shepherd's pie went down well the other day so it can definitely be used. And then there are curries and tagines…

Still not a lot of room in the freezer, but some of the leftover venison has been repurposed into rissoles - we have enough left over for another meal.
Also the pheasant carcasses have been converted into stock, which takes up a lot less room.
Out: 1 pack bagels, 1 pack smoked salmon, pheasant carcasses, breaded fish, leftover venison
In: Pheasant stock, rissole mix, more breaded fish, pizza base.

I roasted the lamb and added various stray veg and the last of a bag of potatoes. I've finished up some cherry tomatoes, half a red pepper and some courgettes, as well as most of the Easter cheap carrots. There's enough veg left to go with a meal or two, and lots of lamb. I also made some of the stock from the last lamb joint into gravy but there's a lot left.
I really don't have any plans for the leftovers as there's so little freezer space and we've had more than enough red meat recently. I think tomorrow's dinner will be breaded fish from the freezer, which might make space for some of the meat.

I had to leave 3 large lovely f/r corn fed chickens reduced by 40% in the shop today, as I really do have no room at all in any freezer. I did bring home 2 Piz/Exp pizzas (reduced to less than £2 each from £5 something) and 3 packs of chicken spring rolls (2 packs left - 1 disappeared for lunch) and 2 packs of beef strips for stirfries…
Tonight we are going to have chicken coated in spices and breadcrumbs (think fake Kentuckeee chicken) with a large pile of coleslaw and DH will also likely have some chips - DS1 may also have a few. Tomorrow he (DH) is taking DS2 back to uni - I will need to visit the shop for food for DS2, as the shops will be closed when he gets back to Halls and he won't go shopping until next weekend. I shall make risotto with chicken scraps, frozen spinach and frozen scraps of broccoli stalks and mushrooms for DS1 and I - there will be enough for lunches for a few days. Sadly that doesn't really use much from the freezer, but it is a good meal for us when DH isn't here, as he doesn't like risotto.
DS2 will take back 2 bags of the cheap Easter onions with him. That still leaves us plenty - and also lots of shallots.
