  • I always cook my birds upside-down, no matter what weight, and they are much more moist, nothing worse than dry breast meat.If you havent tried it then I suggest you try it soon, though wrestling with turning a turkey crown may not be the best intro to cooking it this way. Use turkey turners or 2 strong pairs of tongs (BBQ?) and be careful. I am also taking the legs and wings off and making a crown. I am following Raymond Blanc's method ( as seen on tv l) for preparing it, though he gave just an hour (:eek:) for the timings 30 mins on high?? and then 30 mins slow, however mine will be in our slower oven, upside down for longer., I have no idea of the temperature of the oven its gas but does its own thing,:cool: so I will keep checking it. Leave to rest!!! it makes all the difference. Our total this year will be 5 kids and 13 or 14 adults or sardines as we like to call them :rotfl:. We have 4 generations at the table and family from abroad here.

  • Cooking bird upside down sounds good, I buy turkey crowns and use the St. Delia method http://www.deliaonline.com/how-to-cook/chicken-and-other-poultry/how-to-roast-turkey.html and have never had a dry turkey.

    I'ts xmas soon, this is an old thread but it is a useful one.

    Aldi do a frozen Turkey crown for a tenner (about 2.8kg) but it said on the wrapper it is pre basted, is that mean no butter is needed as all the moisture enhancing stuff was already injected into the bird?


    Another question is it better to spend another £5 and get a chilled fresh turkey crown (currently on offer for £15 in Tesco)?

    sorry, this is my first time with this bird, usually just buy the diced stuff.

    Have cooked fresh and frozen over the years - as long as you allow enough time to defrost the turkey - there's no difference in taste as far as I've experienced!

    Il be cooking our bird upside down a pan with some root veg and plenty of wine which should keep it moist.

    I have bought a £10 one from tesco a whole turkey serves 5-7 people
    My first time cooking a proper turkey all by myself so the pressure is on for me too lol

    I bought a frozen Turkey Crown last year from Iceland and it was fine. bought another one this year (£15)
    I think it's the way it's cooked rather than fresh/frozen or expensive/ cheap!

    I always put unsalted butter under the skin with rosemary and a bit of thyme.

    Last year I put it in one of those roasting bags as I had to go out visiting and when I came back was amazed that it had browned in the bag. Thought it would be pasty looking - I will be using one again this year.
