Mortgage offer expiry date - what happens?

I have a mortgage offer which has an expiry date in a couple of weeks.
Let's say the expiry date is the 20th November, is that the date by which you need to complete, exchange or for the solicitor to request funds in preparation for exchange/completion?
If the offer does expire, and circumstances haven't changed, is it a rubber stamping exercise to reissue it or is it more involved?
TIA

Which lender please?

The answer certainly won't be "exchange" - that's irrelevant to the lender (you can exchange months in advance of completion - you still need to keep the mortgage offer updated).0
