My ex & I share a joint account whilst we sell the house we co-own. - If she has used our house as capital on a loan or owes money either as a loan or as debt - could the 'echo' of that me effecting me via the joint account?

As you are financially linked, with the joint account, any credit issues she has may impact on your attempts to borrow money. A clean financial break ASAP would be advised.
