Tesco Clubcard vouchers

When using Tesco Clubcard vouchers in store, what happens if the value of the voucher is greater than the cost of the shopping?

Is the remaining value refunded to the clubcard account and issued as new vouchers?  Does the clubcard value have to be lower than the cost of shopping?

I have some £50 vouchers expiring this month and there are no reward partner offers I am interested.  I know the trick to extend the expiry but would rather put some towards shopping and petrol/diesel.
