I've made my own burgers for years.
I've have a Tupperware burger press for almost 50 years, but you don't really need one.
I've never used breadcrumbs or egg to bind. I squeeze the mince really hard and it shapes well (may be because I then use the burger press).
I use lamb, beef & pork mince and add herbs/spices as I fancy.
I might put a dollop of horseradish sauce or Dijon Mustard, you could add apple sauce to pork.
I do my own wedges but unlike joedenise, I don't parboil.
I use small new potatoes and quarter (halve if very small). You then get the goodness from the skin.
You can then use the oil spray but I use olive oil.
Sometimes I put herbs or a crack of sea salt.
I cook them 'on their backs' and don't turn.

I don't have a burger press so I shape my burgers with a pastry cutter. I often add chopped onions or capers or cornichons for flavour and to stretch the mince1

Another suggestion would be to use a separate tray for the smaller veg/chips. The meat could go on a raised tray to let the fat drip off and the veg/chips can cook without being swamped.
Some days, it's just not worth chewing through the leather straps....

Of course there is the really obvious choice - use a grill
On the rare occasion we have a burger, they go under the grill and any fat drips down into the grill tray.

For potato or sweet potato wedges I use any size, just cut them into chip sized pieces, drizzle with olive oil and whatever herbs/spices I fancy and shove them in the oven at whatever temperature the other stuff in there needs and adjust the time accordingly.
i have wondered about an air fryer but never having had one, have no idea what they would taste like.0 -
