Recipe ideas? Lots of veg...

Hi all,
Popped to Asda, jst for a few bits and bobs, but couldn't resist the whoopsies!

I got:
organic broc
cauliflower
peppers
baby carrots
runner beans
sweet potatoes
rice noodles
cherry tomatoes
mushrooms
baby courgettes

I have the usual basics, pasta, rice, stock cubes etc. Also have some meats in freezer.
Anyway the point of my thread is that I want to cook everything tomorrow - but I need some tasty recipes suitable for freezing! Any ideas?

Hoping that if I freeze lots of meals up then on my bad days at least I don't need to put extra pressure on myself to cook meals too.

Sorry i didn't see your post earlier in the day, i am not very good at doing links, however i have found a really easy and lovely recipe on the tesco website " if i am allowed to say that" its for Penne with cheese and broccoli. Its really easy to make and really really lovely, plus you can freeze it. My daughter is a veggi so its really handy to have in the freezer, for when she comes home from Uni, cheap to make as well. Just go on to the site mentioned, go to the recipe bit and type in Penne with cheese and broccoli. The recipe is still there, as i have just looked. There are loads of ideas to try.
    I don't think that i am allowed to just type out the recipe for you, that may be against MSE rules, don't know, so thought that i would give you the link. Hope thats of some use to you. If i think of any more i will get back to you.

  • Hi! I'd make the brocoli and cauliflower into a soup, with cream and blue cheese if you have.

    I'd make the carrot and sweet potato into another soup.

    The veg would go into a pasta sauce, either a veggie one, or with some mince and lentils.
