I have about 500g of runner beans, 500g tomatoes, some red onions and lots of spices. I was hoping to make some chutney but on searching recipes I am confused about what vinegar to use, some say cider vineger so I had bought a 350ml bottle, and I have some white wine vinegar, and also clear distilled malt. I don't have mustard powder or apples but have turmeric, mustard seeds and pears!!!
Can I make something witb this, and if so, how??
Thanks for any help x

Use any vinegar you like except balsamic because that's not acid enough to preserve. It depends on what flavour you like, cider is softer than wine which is softer than distilled....Chutneys usually have an element of sweetness somewhere [not always] so pears are fine but apples have more pectin which will stiffen up the chutney a bit. If you don't mind it a bt runnier, use the pears. I'm sure you'll be able to find something online, I found Pam the Jam [she of River Cottage fame] very helpful for recipes, or just do a search for pear and runner bean chutney. I expect someone has made something similar somewhere and put it online.

Regarding vinegar for chutney I often use some cider vinegar made up to the quantity needed with clear distilled malt.
I think one can make chutney out of almost anything, I have been cooking for a long time and have the confidence to just throw things together and hope LOL, disaster happen only occasionally.
One of my preferred sources for recipes and ideas is Allotment Gardeners website, perhaps have a look at a few recipes like this one Runner Bean Chutney Recipe (allotment-garden.org) and then scale up or down according to what you have.
I would certainly have a go with runner beans, tomatoes and pears. Mustard seeds - could you grind some down or put a generous amount in a piece of muslin in the pan.

Make sure that you note your ingredients and quantities in case you wish to repeat the end product, or change it slightly another time.

You can make chutney out of practically anything - if you want it jam-level of stiffness, get some Certo (liquid pectin). Mustard powder is just mustard seeds, ground - grind them in a mortar and pestle if you want powder, or leave them whole. The chutney will be less uniformly 'warm' but I have had and enjoyed chutneys with whole mustard seeds.
Cider vinegar will be fine, as others have said. Failing that, look for Indian pickle or achaar recipes - I think Diana Henry did some.2024 Fashion on the Ration - 10/66 coupons used

I think that mix should work. This is a very vague chutney recipe which could be useful. Both allotment garden and Pam Corbin are good too.If you look at the recipes to give you an idea of fruit / veg proportions to your vinegar and sugar you should be fine. you can play with the spices as needed - I'm a weakling so no chilli for me.
