Brussel Sprout coleslaw

Hi everyone,I did a search but nothing showed up,sorry if its been posted before.(please move or delete if it has)

I heard Joanne Lumley talking about Brussel sprout coleslaw,so I thought I would give it a try.
It was really nice,I just made enough for a few cheese and coleslaw sandwiches for my husband and myself.
I waited until he had nearly finnished eating them and then said I had heard about this recipe,he said that sounds disgusting "you cant beat real coleslaw":rotfl:
About an hour later I told him he had just eaten Brussel Sprout Coleslaw.:D
He had to admit it was nice.:rotfl:
I used 6 sprouts
1/4 chopped onion
1/2 grated carrot
mixed with low cal mayo,I find it better left a few hours to bring out the flavours.

    Also just had a thought that I once made a coleslaw from celeriac (from a Cranks recipe and it was also gorgeous!)

    OOh! Thanks for the post, frosty. I will definately be making this in the morning, we love coleslaw and have got lots of brussels on the allotment,
    so will be saving money as well. Thats another use for the much maligned brussel sprout. Cheers demented:T

    That recipe just sounds so very wrong:eek: :eek: :eek: :eek: :eek: :eek: :eek: ....I dont really like sprouts though.

    I've been wondering for a while if you could do this - after all coleslaw is based on cabbage, and sprouts are just baby cabbages :rolleyes: Will definitely give this a try - sounds yummy!

    Alex - I just happen to have half a celeriac that needs using up. Do you shred it as is, or do the celeriac strips need a little boiling first? (like in Waldorf salad)

  • Just looked up the recipe - it's for 1 medium celeriac, so adjust quantities as you wish:

    -peel celeriac, cut in chunks and rub with lemon (or will go black)
    - grate or finely shred
    - squeeze in juice of lemon and half tsp salt
    - extra water may come out the celeriac at this point, so drain a bit
    - half tsp mustard mixed in about 90ml mayo
    - then mix this in. Quantity of mayo depends on your taste
    - can added ground black pepper and chopped parsley (optional)

    so no cooking required!
  • These ideas remind me of wartime salad recipes. The ministry of food was very keen for people to eat raw salads all year round. They produced leaflets with ideas for salads for all seasons. The winter suggestions feature shredded sprouts, cabbage, root veg.

    Sounds like the classic French salad -Céleri rémoulade ;) Délicieux

    I am impressed. This is a great idea... and will be much easier for me to make now that I have broken my right hand.
    And it is a smaller quantity for those living on their own... so no wastage

    Actually that is what she calls it in the Cranks book - confused me for a moment when I was looking it up as have no idea what remoulade means!

    I just made it once and ate it (as suggested) with some crusty french bread and olives and pretty much polished it off in one go!
