Distilled Golden Swan Vinegar for Pickling?

Hello!
I've never pickled in my life, but we have quite glut of cucumbers and courgettes this year. Even the neighbours are sick of them.

I have 20l of the distilled white vinegar I buy in bulk for cleaning and a full spice rack, as well as an obsessive jar saving habit and wondered about pickling all the things. 

Does anyone know please if this vinegar will be ok as it's 5% (fingers crossed!) and Google is confusing me. All recipe suggestions really welcomed if it is OK.

    Thank you! Google was telling me all sorts 😄 Someone said it needed to be 6% to pickle properly but I trust you all more than I do Google, thank you! 😊

    I'd love to hear your comments if you try any of these, goldfinches.

    ETA: I was looking at pickled shallot recipes as I have some in the fridge needing to be used and there are some helpful tips about pickling generally included in this recipe Spiced pickled shallots recipe | BBC Good Food.

    Here is one of them.
    "CHOOSE THE RIGHT VINEGAR

    For pickles to last in the jar, the vinegar must be 6% acidity. White wine and malt vinegars are 6%, but cider vinegar has slightly lower acidity, so is more suitable for chutneys."
