at rate switch stage at the end of a fixed term, by potentially either changing the term on them so they all become closed down and opened up as one.
Or is this only allowed by changing lender?

Don't know about every bank, but none of the ones I've had mortgages with will allow this,a remortgage is what you need.0

Many allow simultaneous product switch with single fee which amounts to the same thing.( No waiving of ERC if not date aligned)
Changes to term rairly needed unless hitting overpayment limits.
