On PIP and had to adjourn the meeting due to stress now ive been suspended for a week

I'm sorry you are having such a hard time.
Try not to think of it as them 'Winning' - instead, try to look at it from the perspective of what's best for you. It sounds as though whatever the underlying reasons, this is no longer the right job for you, so it may be that the best thing you can do is to look for another job and move on as soon as you can.
In the meantime, plan for the disciplinary and PIP - if you feel that the current PIP is unfair and doesn't really match your actual job, then make some notes in advance to set that our and, at the very least, allow you to clarify whether they are saying that your job responsibilities have changed and that it does now include those extra things, or of they can clarify how they relate to your job as you understand it.
I'm not sure what you mean when you say you'd like a settlement. IF you want to be able to resign and leave on the basis that of an agreed reference which doesn't mention the PIP or disciplinary then you might be able to get that, but of course you'd need to feel confident that you could get another job quickly, or manage without one for a time.
I don't see that there is a situation where you would be entitled to any kind of financial pay-out beyond perhaps agreeing pay in lieu of notice of you and they both wanted you to be able to leave immediately rather than working your notice. If however you feel that they have not behaved appropriately speak to your union, if you are a member, or to ACAS, to check where you stand.
