Carrot cake recipe

can anyone recommend  a really good carrot cake recipe?  There are lots out there but the one I liked the look of had too many conflicting reviews!  I’m making it on Tuesday

    I should qualify this recipe as having been well liked by the WI in Carnoustie when Mum was a member and also well liked by all the visitors to their coffee mornings and sale of work meetings. It was also included in the Parish church's recipe booklet sold to raise funds for the church roof.

    Thanks Duncan, that sounds great.  WI recipes are usually foolproof and I like the idea of a loaf cake.

    You can fiddle with the ingredients and make a smaller cake and have more topping, that is the recipe as written but I made one half the size in the bread maker and then cut the loaf in half and used the same mixture for the topping and spread it on both halfs.
