Joy of Baking Red Velvet Cake recipe question

Hello all. I am hoping to bake a red velvet cake today, using the Joy of Baking recipe. The recipe calls for using liquid food coloring and I am having a ridiculously hard time finding it. I have gel food color, how do I use it as a substitute? Or should I just wait until I can find the right food coloring?

Any other advice to make this a success?

Thank you!

Hello again mia, how did your chocolate chip cookies turn out? I hope they were a triumph?
As regards the recipe you mention above I think you mean this one Red Velvet Cake - Joyofbaking.com *Video Recipe* and having watched the first part of the video that shows making the cake mixture I think your gel food colouring will be fine to use.
The way the food colouring is added to the buttermilk before being mixed with the other ingredients means that you can use your gel and simply add it and stir until you get the very bright red colour shown in the video and then continue with the recipe. In the video Stephanie says that when you bake the cake the colour always fades and so you need to start out with a much brighter mixture than you expect the finished cake sponge to have. You will also be adding the coloured buttermilk to the other ingredients which will dilute it and lessen its intensity so if I were you I would err on the side of too much colouring rather than too little.
