I have 300g cranberries left over after making my cranberry chutney - I'm looking for biscuits or other sort of nice things to make for my Christmas hampers - can anyone help with recipes?
Thanks

I made some lovely cranberry jam last weekend with 300g cranberries.
300g cranberries
300g castor sugar
Simply put a film of water in the base of a saucepan large enough to hold the ingredients. Pop in your cranberries and sugar. Dissolve the sugar over a low heat, then once its dissolved, turn up the heat and boil rapidly whilst stirring for approx 7 minutes or until it has reached a jam like consistency. This made me a full size jar of jam with a little to spare. Remember to pour boiling water into the empty jar before you start to sterilize.
Cranberries set well naturally so no need for pectin or any setting agents!

These cranberry and white chocolate cookies are yummy and would look excellent wrapped in cellophane and tied with ribbon in hampers. (Well I hope they'll look good cos thats the plan for my nan and aunties hampers nearer to xmas!)
