Cranberry Recipes

I have 300g cranberries left over after making my cranberry chutney - I'm looking for biscuits or other sort of nice things to make for my Christmas hampers - can anyone help with recipes?

  • I made some lovely cranberry jam last weekend with 300g cranberries.

    300g cranberries
    300g castor sugar

    Simply put a film of water in the base of a saucepan large enough to hold the ingredients. Pop in your cranberries and sugar. Dissolve the sugar over a low heat, then once its dissolved, turn up the heat and boil rapidly whilst stirring for approx 7 minutes or until it has reached a jam like consistency. This made me a full size jar of jam with a little to spare. Remember to pour boiling water into the empty jar before you start to sterilize.
    Cranberries set well naturally so no need for pectin or any setting agents!

  • These cranberry and white chocolate cookies are yummy and would look excellent wrapped in cellophane and tied with ribbon in hampers. (Well I hope they'll look good cos thats the plan for my nan and aunties hampers nearer to xmas!)

  • Last year we mixed them with cooked apples and put on a crumble topping. I nice change.
