Hi everyone, I'm a long time lurker on these forums and just got the confidence to post!
Sometimes I find the long term challenges a bit overwhelming to dive in on so I'm starting my own little challenge. I did this for a few weeks pre covid shopping and will start again from next week. For me, it is one day for one person- vegan diet.
My challenge is... one days worth of food for the spare change in your pocket. Basically, total value of any coins that you have that are less than 50p coin. I pay mostly on card now but still prefer cash so I can see where my money is going.
My go to ideas are carrot soup, jacket spud and beans, instant noodles, reduced bread for toast etc. Plus whatever I can create from reduced bargains.
So tomorrow's budget is £1.61 for the day.
Even if no one else is up for it, I'd welcome any inspiration or ideas!

. Unfortunately I am neither vegetarian nor vegan (though will eat both, on occasions) - I just wanted to say hello.
I suggest you try looking in the Complete Cooking Collection which can be found at the beginning of each months Grocery Challenge. I'm sure I saw a Veggie/Vegan on a budget thread - though it is a few years old, so the prices quoted will be out of date. Good luck with your challenge. I won't be joining you as haven't used cash since last March when we first went into lockdown so no change in my purse or pocket! I have a couple of notes from pre-lockdown in my purse but that's it.
I'd also suggest looking at the recipes at the beginning of the Grocery Challenge. I'm sure you'll find some recipes you can use.
Another source for cheap recipes is Thrifty Lesley - loads of recipes for 50p per person, mainly vegetarian and some vegan. There are also a lot of vegan recipes on Jack Monroe's site - www.cookingonabootstrap.com.

If you want budget friendly and easy to do get hold of the vegetarian student nosh book, couple of quid on eBay.
My go to vegan comfort food is a spicy lentil and spinach curry. Leftovers can be thinned down into a soup.Mortgage started 2020, aiming to clear it in 2026.1 -
Marks are doing a Fresh Market offer this week of a roasting pack of shallot, sweet potato, carrot and parsnip for 65p and I've seen some with y/s reductions on them too. That would make a good soup or tray full and you could add some canned white beans whizzed with oil and garlic to make a dip for another 65p or so depending on whether you get butter beans or cannelini beans and then hope to get some reduced fruit somewhere maybe or a banana with what you've got left.
Alternatively if you've got some flour you could make a potato and onion pie or a pissaladiere topped with tinned beans and some leeks and courgettes."Only the most pleasant characters in this book are portraits of living people and the events here recorded unfortunately never took place"

Pasta ,with a tomato sauce, and a handful of frozen veg, I freeze onion, peppers and mushrooms, add any herbs or chilli flakes too.so a big bowl full for little cash, if you make enough can then be eaten twice, portion for next day or freeze.Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.0

You could check out lidls if there's one near you, thy do a fruit and veg box of leftovers for 1.50. They put ours near the tills by the self service machines in the morning but that would do you for at least a couple of days depending what was in them. The times vary from shop to shop though by the look of things.

well done for doing your first post! scour for local food pantrys and facebay for locals getting rid of food. use checkout smart and shopmium as they usually have freebies and/or money off items. check out the ys sections in all your local supermarkets. food is probably the easiest bill to cut down on compared to other utilities. good luck with your challenge. x0
