holiday pay and contract advice

i started work in feb 2020 for a tipper franchise i am paid a daily rate of £120 a day £20 of which is a bonus based on the truck not getting damaged,holiday pay is £100 a day but no bonus ,also have been told holiday pay will not be paid for first 3 months of employment as its a probation period ,so my holiday pay will only start accruing from 1st may this dont seem right to me,also i have never seen a contract of employment.

Do they deduct PAYE tax and NI?
If an employee you accrue paid leave from your first day of employment but your employer could say you could not take paid leave during your probation period (as long as they don't extend your probation period so that there isn't the opportunity to take it during your holiday year).0
