Hi All, looking for some advice
Am "tweaking" an Irish Cream Cheesecake recipe for Christmas dessert (initial try was ok but didn't really taste the Baileys tbh). Was thinking of substituting the whipped cream on top for the Baileys equivalent but didnt want to waste a tub. Has anyone tired to whip either type of pouring/extra thick cream and, if so, which gave the best result?

short answer is no
Long answer is you can stabilise it for whipping for toppings using gelatine
You know what I would do? Make the cheesecake and then get Baileys Chocolate and grate it over the top for decoration4 -

I've had the Baileys cream in the icing of a cake, and you are spot on, it sort of reminds you of Baileys but the flavour is quite subtle. There are recipes out there for making your own Irish Cream, basically from sweetened condensed milk, chocolate syrup and whiskey. You could maybe cheat by just flavouring the cake itself with the chocolate syrup and the whiskey? Or put it in the base1

I don't know how long it lasts, but if you whisk instant coffee granules and sugar with really ice cold water you get a thick mousse that you can pipe. It seems to have been trending on social media recently, so loads of recipes around.

That looks really useful and right at the end she shows you that she's left it standing for 6 hours and it still looks good. I wonder if you could stir some whisky into it and then grate the chocolate over it.1

It depends on the fat content. If it's the type of extra thick single cream, then no, that typically has about 18% fat I believe. WHipping cream starts at about 35%

Or you could get double cream and add Baileys to it! But what to do with the rest of the bottle? My aunt started a tradition. She asked the kids to get me to make a coffee for her with 'special milk' and is now a bit of a joke!

As has already already been said, only whipping or double cream will thicken up. For a few years I’ve made Nigellas Irish Cream Tiramisu whereby it is layered with a mascarpone mix of eggs, sugar and Irish Cream over coffee soaked sponge fingers. It is divine! Not much help now I know, but it’s so easy too. 🎄🎄🎄1
