Any ideas who we could get to witness us signing these documents? With covid it’s particularly tricky. We’ve tried; Gp, optician another solicitors office, health centre, librarian and none would sign it for us. We’re not sure who else to try, we don’t want our neighbours knowing our finiancial details and most of our friends live quite far away. The solicitor said the lender won’t budge despite Covid restrictions.

Try a different solicitor, some have closed their offices and others are still happy to witness documents.Had a similar document witnessed earlier today, but had to phone around 3 places to find one happy to do it.1

The witness has no need to read the document. Just witness your signing it.1

And the neighbours wouldn't "know your financial details" beyond the identity of your mortgage lender - which is public knowledge anyway once it's registered.1 -
Meet a friend for a socially distanced chat in a park and get them to sign it if you don't want to ask your neighbour.

All the above ways are fine, you could even ask your postman to witness it if you want to. Or sign it over zoom with a friend and post it to them to sign
You are overthinking it a bit0 -

OP, literally anyone can sign provided they are over 18 and not also a party to the mortgage.1 -

I think I’ve managed to get two people from the post office to sign on Monday. Hopefully they won’t change their mind.0
