Help needed - Light Fruit Cake

Hi all,

Wondered if you could help!

I'm making a light fruit cake for my grandparents food hamper & wondered how far in advance I would be able to make the cake. I'm going to be giving the hamper to them early within the next 2 weeks & ideally would like to do the cake today. Will it keep?

What recipe are you using? If you google Deliaonline you should get some idea on a two-week recipe for fruit cake, but generally fruit cakes last ok (especially if you stick a bit of booze in them).

Hi Fen1,

Thanks for your reply. I knew an ordinary fruit cake would last but waasn't sure if there was a difference with this being a light one. Had a look on Delia & there is a similar recipe but it doesn't say how long it'll keep for.

They freeze really well so you could make it whenever, double wrap it and freeze it, and then get it out the night before you need it or something.
