when to register self employed

I am about to start as self employed Personal Trainer from 26th Oct. The company I have just finished with pays our salaries in arrears. So my last payslip from them will be the end of November for work delivered in October. When do I register self-employed as I will still be paying Tax/NI in that payslip

Doesn't matter. You can be employed and self-employed at the same time. Plenty of relevant info here: https://www.gov.uk/browse/business0
