Applying for mortgage with one applicant on 0 income

Anybody got any experience of this? Me and my partner have had an offer accepted but I've just been given redundancy notice.
We plan to buy the property on partners wage alone and should be withing the lending amount based on the one salary alone. I am currently still employed and have found another job to go to, but its on a temporary contract with view to permanent after Christmas. So we considered entering my salary as 0 as we don't know where I would stand with it.
Anybody any experience with things like this? We're just worried it could cause an issue.
