First mortgage - proof of address

My partner and I are going to apply for our first mortgage very soon. We've had an offer accepted on a house we like, and our solicitor has asked us for ID (passport and driving licence) as well as two additional proofs of address each from the last three months. We haven't received a single physical letter in the last three months. The electricity bill is online, but in my name only, so I'm using that and an online bank statement. Hopefully that's enough. My partner is using a bank statement, but has nothing else.
He got his tax return statement in June. We have a council tax statement from March. No NHS letters or HMRC notifications from the last three months. We've never applied for or received any benefits or pension, and we're both self-employed.
Does anyone have any ideas?

Explain to the solicitor and see what they'd accept? There aren't universal rules. I'd take the council tax if it's for the current year, even if more than 3 months old. Or you might be able to find a way of asking a bank or HMRC to post you something ad hoc.0

Council tax letter should be fine as its for the year.
We have been living in a caravan so literally have no utility bills! We have used HMRC letter. Bank statements. Downloaded BT bill in my name and downloaded Sky bill in my husbands name0
