Mortgage advice...my partner works abroad

Hi! I'm hoping someone can help me.
We've sold our house and moved out, now living with in-laws. We've found a property we want to buy and have just had the offer accepted this morning. But we're struggling to get a mortgage.
My partner works in Saudi Arabia and comes home 3 times a year for 1 month at a time. He is paid in GBP to a UK bank account and doesn't pay tax. Some lenders are saying they'll only count his wage as taxed (nationwide), some are saying we can't get a mortgage as he doesn't qualify as a UK resident (NatWest), and HSBC have said this morning we can get a mortgage but they will only lend a maximum of 75% of the property value. We need a mortgage LTV of 85%.
I really don't know where to turn to. Surely it can't be THIS hard to get a mortgage
He earns more than enough money for the monthly repayments, we've sent over his employment contracts and payslips and still no luck. And he is paid in GBP so there's no foreign currency involved.

Not too sure at max ltv but happy to check
We are in a similar position- partner works abroad. We have had to provide numerous letters/documents regarding how much taxes he pays- he works in Norway and is taxed there. The lender was very explicit about this- they needed to see that he has paid taxes before they would consider us. So I wonder if that is the problem.
