Have read some threads and am going to attempt my first overnight slow cooking with a chicken.
My question is, does anyone salt or put herbs on the chicken or does that come later. Am using just a splash of water on low heat. Wish me luck.......

Probably too late now but I don't put anything on or in with the chicken when I slow cook it. I put 4 balls of foil at the bottom to sit the chicken on and then just cook on low for about 8 hours. I've never done it overnight myself as I think I'd forget to turn it off when I got up and quite often I'm in bed for longer than 8 hours anyway!

I just put a few onion quarters in and maybe a lemon. You can put your preferred spice in too or a marinade

Thank you both. I decided I wasn't brave enough for overnight cooking so am putting it on now. I am going to try it without anything today. Depending on how it goes..........will try a marinade next week.AKA : Bala La Boo & Bala Baloo

Does chicken cooked like this taste like roast chicken or boiled/casseroled chicken?0

I'd say it's more like poached chicken. But it does seem to make the meat go further as you get every scrap of meat off the carcass and then you can put the bones back in with some onion, carrot & celery and some water and make a great stock for soup which will remove even the smallest scrap of meat.

I did a whole chicken yesterday with 2 tins of coconut milk mixed with thai red curry paste. Put it on low before work. Chicken was lovely and tender when I came back from work. Shredded it and put it back into the sauce. I'll be doing this again

I put mine on top of 2 sticks of celery, carrots and cabbage. It was a success in that it cooked but some tweaking needed.AKA : Bala La Boo & Bala Baloo

The slow cooked chicken fed 3 adults for one main meal, my dog twice. I then took the advice on here, put the carcass back, added water and let it do it's thing. I managed to retrieve more chicken for my dog and used the stock to make a really lovely sausage cassoulet. Success all round as the chicken was reduced to clear.
Now for the bad news. I managed to melt and ruin the slow cooker. It's over 20 years old but we were just becoming friends. I could kick myself ! The ceramic pot will be kept and used but am annoyed with myself. Any advice on buying new one would be appreciated. Largest possible.

I've only ever had 2 slow cookers and both of them have been Crockpots. The one I'm currently using is over 20 years old and still going strong. Would definitely buy another.
My DD2 wanted a large slow cooker so I bought her one from B&M for Christmas a few years ago, not sure what make it was but it was only £24.99 and it was a 6.5 litre one. She still uses it regularly, mainly for batch cooking. So might be worth a look in B&M or Home Bargains or something similar.
