Freezing white cabbage.

I have a large amount of white cabbages which I don't want to go to waste. Has anyone had any success with freezing cabbage? I found a recipe for a sweet cabbage pickle that I might try( we don't like Sauerkraut). I often freeze red cabbage but I wondered if white cabbage would go into mush. I have red cabbages and savoy cabbages which will survive autumn weather but the white ones are not so hardy.

    I cook cabbage and then freeze in portions.  Works for me.

  • far too much water in white cabbage for it to freeze successfully , it will break down
  • I have found a recipe for baked cabbage in a cream sauce (found it in a freezer book) which I might try and I will try freezing a few portions of cooked cabbage to reheat from frozen. I'll try experimenting with a few things otherwise the sheep will be getting the excess cabbage!
  • That sounds delicious, do let us know how it turns out and if you felt like passing on the recipe I'm interested especially if it's a "prepare in advance and bung in the oven/slow cooker" kind of dish.

    i often bake white cabbage .   cut up put in lidded dish.  add a little cream and water, season and bung in oven.     takes approx 20-30mins    can add  cheese and/or bacon, ham etc to make it more  of a meal than a side dish

    I've never had any problem freezing it. Some people (including me previously) are a bit squeamish about freezing certain things. I found a load of reduced 1k cheddar blocks in Tesco and froze the lot. I know it sounds crazy but they're genuinely fine when I take them out..texture + taste is brilliant!
