The SOA will prove very useful to unravelling this. You mention your income is £1643.73 and your outgoings are £2128.30 but this includes your debt - you mentioned even without the debt payments your outgoings are higher than your income so it would be interesting to see a breakdown for it. It's very common on these forums that people are able to quickly save several hundred pounds every month by changing their energy tarrif, phone contract and food expenditure.
Unfortunately, if you really are living on the bare minimum everyday then sourcrates is on the money with you needing to learn to live within your budget. If you can't afford a big car or a big house then you either need to increase your income (the easiest way would be your husband getting a job - appreciate it's easier said than done) or downgrade.

You will definitely be eligible for Universal Credit, when I was claiming my husband had no income and I was on £2200 per month we got around £600 per month, mostly housing benefit, UC would give you the addition money to cover your bills and your debt.
Would you be able to post up an SOA as your monthly outgoings are really high and everyone here could be really helpful with reducing your outgoings

I think you need to get out of owning an expensive car, even if there are short term penalties, and switch to a car £1k ish. This was one of the best first steps we did. Bought a Citroen Picasso for £300 and ran it for 5 years ..... without much maintenance. Get a SOA posted up and we can offer more tailored guidance.Amazon Bar Raiser2

I'm sorry for the late reply I've been trying to sort this out.
The only money we have coming in at the moment is universal credit and child benefit.
The outgoings are everything we pay out - not including debt.
So far I've spoken to 2 companies.
One that is dealing with a ccj of mine and they have suspended the warrant as I sent them over my income and expenditure form.
I'm still waiting to hear from another which hasn't got to that point as of yet.
I still have other companies to call today and chase up.
The car is ours once the outstanding balance is paid and that's around £7k
We are behind with these payments as I cannot afford them once priority bills are paid.
I'm calling today to see what my options are regarding this.
We have paid around 60% which was fine when my husband was working.
I know this is our biggest issue. It needs sorting one way or another.

Without an soa it is difficult to advise but it sounds like even before Covid you were over committed and your husband losing his job has tipped you over the edge. On the plus side your rent which is the most important bill is up to date. If you are 60% into a PCP deal with the car you can hand it back. It might be difficult with no car but unfortunately you have no option. Best advice is to default on any debts or ask for payment suspension then buy a cheap car.
