    Overnight Oats - I use a half cup measure and put everything into jars (like small Kilner jars that paté comes in at Christmas time).
    1 measure oats, a sprinkle of frozen fruit/dried cranberries/raisins etc, 1 measure yogurt, 1 measure milk. Close it up and refrigerate. Next morning mix and eat. You can grate a bit of apple or pear over or add fresh fruit at this stage and add more milk if you like it sloppier. Enjoy!

  • Also if you are short on time you can make the overnight oats for a couple of days and it will last in the fridge. Someone my husband works with says that she makes a weeks worth in one go but i would probably do 2-3 days worth. I love mine with frozen blueberries mixed in and then topped in the morning with slices of banana, a little maple syrup and some pecan nuts.
  • I do overnight oats on a volume basis. The simplest 'recipe' is one cup oats and one cup milk (I use, ummm.... oat milk), stirred together in a jar/dish and left in the fridge overnight. I'll pop some frozen fruit on top (I usually use those 'breakfast topper' bags for convenience and variety) to defrost overnight too.
    You can then vary this by
    • swapping some of the milk for yoghurt (I've been using dairy free fruit flavoured yoghurts and this is great for adding more flavour and protein)
    • adding a tablespoon of chia seeds (I love the texture they add to oats)
    • stir a mashed banana through the mix (great way to use up bananas on the turn, and I'll add some cacao powder too!)
    In a better financial position than ever before (thank you MSE!). Moved back to Scotland and now trying to keep debt-free!

    i thoroughly recommend Nigella's breakfast bars recipe - very easy, customisable with whatever you have around, only drawback is length of cooking time, but they can easily go in the oven when it's on for something else.  https://www.nigella.com/recipes/breakfast-bars
