  • Please post the recipe. I don't know how to make enchilladas but they are my fave when we go out for a meal.

    Here's the enchilada recipe i used - worked a treat and tasted great. I'd have said that it only does 3-4 people tho, since i used the same amount for 2 and only had a single portion left!

    Ingredients: (makes 8 – 10)
    • 8/10 flour tortillas
    • Jar enchilada sauce
    • Sml carton passata (or tin chopped toms)
    • Tin mixed beans (kidney, cannellini, black eye etc)
    • 2 or 3 chicken fillets, diced
    • 1 onion, chopped
    • Mushrooms, chopped
    • Pepper, chopped
    • Grated cheese
    • Chopped chives
    • Olive oil for cooking
    Method:
    • Brown chicken in lg non stick pan/wok then reserve.
    • Fry onions few mins
    • Add other veg, fry for few more mins.
    • Add tin mixed beans and chicken, warm through.
    • Add 2/3 jar enchilada sauce and 1/2 carton passata (or 1/2 toms).
    • Cook thoroughly then leave to cool.
    • Lay all tortillas out on worktop and divide mixture equally in centre of each.
    • Carefully roll up and place in rows in oven proof dish (many in a large dish or fewer in several small dishes (they freeze well)). Be careful filling won’t come out.
    • Add the remaining passata (or toms) to jar enchilada sauce and shake up.
    • Drizzle sauce equally over tops of tortillas (avoid dripping off them).
    • Sprinkle cheese, chopped chives, salt and black pepper over top and cook in middle oven 190 (ish) for 20 mins (or until piping hot, crispy around edges and cheese melted).
    • Serve with salad, refried beans and sour cream.Delicious!
