Remortgage for BTL - offer extension

Hello,
I am in the process of remortgaging my BTL to another lender. Offer valid for 6 months which is coming to an end soon. I decided to hold off on completion till later given the changing economic situation relating to the pandemic. I gave my covenyancer enough time to set completion date etc before offer expiry. However, out of the blue, on completion date the covenyancer decided to do some further ID checks on me! I had already provided all the neccessary information to them well in advance including information relating to ID checks so no idea why they suddenly sprung even more checks on me, and that too on the day of completion!
The checks have taken a couple of days and so the monies were returned to the lender as completion was cancelled. However the mortgage offer expires in less than 5 days and no completion date has been set so it looks like the remortgage is impossible without an offer extension. ID checks have apparently been passed.
I have tried reaching out to my convenyancer and can only manage to speak to someone else on the team. Despite me questioning the timing, they just say "they will look into it". No sense of urgency at all. I have emailed the whole situation to the conveyancer as well, but no reply or call back at all.
My questions are:
- how likely can the remortgage offer be extended? even just a few weeks should be enough.
- is my convenyacer at fault here, why leave it till completion to do ID checks?! If so I shall make a formal complaint (after the remortgage completes, if at all possible).

Anyone have any advice on the above? Really worried about this whole thing. Confused who was at fault here and whether the conveyancer had a duty to complete the checks in time given she knew about my mortgage expiry.
