There is a discussion thread for how busy trains have been here: https://www.railforums.co.uk/threads/how-busy-have-your-trains-been.207156/page-7

Summary: most long distance trains are lightly loaded, especially at so-called "peak" times in the morning, and late evening. Most people making long distance journeys are leisure passengers (or, for long distance trains that make regular stops, some commuters for short hops)

Hardly anyone is going to business meetings on trains and hardly anyone is making longer distance commutes as those people tend to be working from home

I have rarely failed to get an entire table to myself on many long distance trains in recent weeks

If anyone wishes to make a particular journey, I'd suggest creating a new thread in that forum and people can probably tell you how busy the trains may be; it's also possible to find out which trains have extra carriages too.
