Finally got our mortgage offer! Anything to check?

We finally got our mortgage offer from Santander via L&C after 2 months of waiting, it is a small extension as our existing 18 years mortgage with Barclays ran out, 55k on 750k LTV 11 year loan, 1.49% fixed interest only for 5 years, the plan is to overpay & save to either pay it off after 5 years or possibly sell & move as I am 58 and my wife is 55.
Is there anything else I need to check for? reading through the offer (10 pages) it all seems ok. I thought about shopping around for a better offer but as the process took so long I didn't want anything else to hold it up, I know you can look for multiple offers but as I'm self-employed it seemed to cause quite a lot of box-ticking via L&C & Santander. I had to word things quite carefully or they simply wouldn't understand it and would ask for the same thing. My accountant had to send the SA302's and Tax overviews 3 times! as they couldn't seem to check the figures were correct.
I expect we should grab this with both hands & run for the hills but thought I'd check in here in case I missed anything.
In case it helps others L&C broker was great, very knowledgeable and helpful but then you're passed to a team to process it all and they seemed quite busy so you have to chase them, all very nice to speak to however but seem to lack some experience at times especially with self-employment accounts.
All the best to those still waiting, it can be a very stressful time.
