  • EF update: 21,060 / 25,000 - 84%
  • Not updated for a while. Very little money moved to the EF but we haven't been out much so quite low spends too. Mr3 hasn't been well so we have been keeping everyone isolated.
    Meal planning is going well and I think it's helping to reduce the supermarket spends. We still spend too much on "treats" though, I could definitely bake more myself and the kids love it when we do. Aim for this weekend is try sweet potato chocolate muffins.

    Sweet potato chocolate muffins sound yummy. I do all our baking too due to special dietary needs, and I need to make a dessert but feeling lazy and lethargic with the heat. I just don't feel like warming the oven.

    Leigh - its hard when it's hot, I don't like slaving over a hot stove in summer either! What did you end up making? I've a recipe for banana ice cream (basically frozen bananas then whipped up) that I'm meaning to try for the kids once summer arrives. I'll update on the muffins this weekend

    Not much to report here. Our extension has started so I'm not sure how much I can save to the EF now... I suspect most of my money will go on house stuff and trying to keep within budget.. then once done I can start to pay it down properly!

    I ended up making a Paleo no-bake lemon cheesecake with strawberry topping. It uses gelatin instead of cashews for the cheesecake, thank goodness. I hate when they use cashews for everything. It doesn't taste the same to me. This one is still not as good as a regular full on dairy, cream, and sugar cheesecake, but it satisfies my craving. And even my non-diet OH loves it and keeps stealing my slices.  :s The best part, I didn't have to turn on the oven. I just poured it and popped it in the freezer. 

    Ooh the extension sounds so exciting. I know construction is a pain while it's happening, but after it's all over, it will be so worth it. We might extend our front stoop to a small porch this year and hopefully a sunroom with a fireplace in the back next year. Your EF is looking great!
