cold lunch ideas?

my work do not have a microwave and no heating up facility. its so annoying eating cold food all the time and hard to resist not buying chips every day from the canteen!
so does anyone have any good lunch recipes that can be eaten cold? to throw another spanner in the works i am doing weight watchers no count plan so no bread style lunches please!

sorry if this is a bit too obvious, but do you have a wide necked flask? I was just thinking that, rather than restricting yourself to cold lunches, at this time of year you could really do with hot food, and with a flask you could take all sorts of good, healthy stuff to eat?0 -

Is the food in the canteen not subsidised in anyway? Could you buy say a jacket spud and bring in your own grated cheese or tuna to cut costs?
Otherwise for me, it would be flasks of soup and bread rolls or left over stews, chilli, curry etc etc.

Cold pasta twirls into which you've thrown some tinned tuna, a bit of spring onion and chopped fresh tomato perhaps?
Made up cous cous (either the night before or at lunch time using boiling water if there's a kettle) with some cold roasted med veg - e.g. peppers, courgette etc.
HM quiche with salad
Cold rice with a bit of cold coronation chicken.
Cooked chicken legs with salad?
Just think 'exciting picnic' rather than 'boring lunch' and you'll probably come up with some ideas of your own.I am the leading lady in the movie of my life

In addition to ladygrim's recipe, this one is good because it has lots of options to give variety - add other ideas as you think of them, and personally I wouldn't say that potato is always a must.

I would second the flask idea. On the weeks when I am doing my No Count like a good girl (not every week!) I take in a flask of soup, then pack my lunchbox with some ryvita, some protein like cold meat, and a salad, plus some fruit and a mullerlite yoghurt. I try to make the salad have some protein so that it is filling - eg, kidney beans, tomato and peppers. If I am only being averagely good, I'd add some feta cheese. This kind of meal wouldn't satisfy me without the soup, but having something hot makes all the difference. Oh, and another thought: no count is very similar to the South Beach diet or other low GI diets, and they have some good recipe books/forums. The main difference will be that they are stricter about grains and potato, and most don't allow pasta. There are some great ideas for lunches, including 'quiches' made by just putting the quiche mix into a muffin tin (the metal type, not paper cups) and doing without pastry. If you do it with egg, skimmed milk and a filling like ham and sweetcorn, you will be fine.
