No organising done to-day i'm afraid i had too much going on. This morning was my uncles funeral, it was a strange affair .. half his family who would have wanted to see if off, where not allowed to be there. Their where no word.. no priest.. and no comforting hugs...it felt surreal... not the send off he deserved.
in other news i may murder my DH.. he sat watching me food plan over the past two days then today went into the kitchen and made a meal not in my flipping plan! using half the veg i earmarked for other dishes... surely this is a good reason for murder... sigh.

I keep a copy of the meal plan on the front of the fridge so DH knows exactly that we will be eating! The only thing he eats/uses without asking is bread, butter, sandwich fillings (I don't eat any of the stuff he eats!). If he eats all his bread he has to make more.

DH cooks every other day and i have to admit he can be a challenge... he's a decent enough cook, but his selection of recipes is somewhat limited, he knows spag bol, stew and how to cook things like breaded chicken/burgers with frozen veg that's about it. He doesn't really use fresh veg, at least nothing that needs peeling or chopping.. he did a stew last night skipping the vast array of fresh veg in the fridge and used frozen.
I don't really blame him, he cooks because he knows it's only fair to share the responsibility but its a chore for him and he's not a confident cook. I enjoy it and i'm much more willing to experiment.
So i woke up this morning on a bit of a mission, i've taken a big swead and the remaining Carrots out of the fridge and chopped them. I'm going to turn them into carrot and swead mash. I'm estimating i'll get 3 portions so I'll use one portion tonight for tea tonight and the other 2 will go into the freezer. Hopefully now they are 'prepared' the DH will use them.
I've got one more Swead left and no carrots... so i'll have to google some swead recipes either that or i'll bung it in a curry cause everything can be curried haha.

Both DH and I are happy to eat mashed swede as long as I mash it with lots of black pepper! In fact DH prefers it like this rather than with the carrot as he finds the mix quite sweet.
You don't just need to use either of these mashes as a veg but they are good as a topping for cottage pie or similar.

I used to make "Stuff yourself solid vegetable curry" with cubed swede. Swede is low in calories and filling. I don't recall the spicing so use whatever curry powder you have to hand or make your own. (I usually make my own.) The main ingredients were a chopped onion, garlic, an apple (to sweeten the curry), cubes of swede and two tins of tomatoes. Add something green for contrast, if you can (e.g. spinach, kale, broccoli, a green pepper). Serve over rice or bulgar wheat.
Have you talked to your DH about his fear of preparing/cooking fresh veg? Perhaps ask him to help you to prep some in a non-confrontational way, so that he can learn to relax and enjoy cooking.
