Does the builder pay you and you pay your son or does the builder pay you and your son separately
If you are querying your Council Tax band would you please state whether you are in England, Scotland or Wales

We work for a sub contractor and he pays me . Was wanting to know if my son could go self employed at 17 and I can get sub contractor to pay him , or is it better for me to pay him and would I have to change my self employed status  to pay him myself

I don't know which is the better option, but you would still be self employed if you employed him

If you pay him as your sub contractor you will have to deduct the CIS tax and pass this to HMRC.   I have been involved with many subs but never one of 17.  Legally, is he old enough to enter into contracts for sub contracting?  Someone else may answer that.
If he was your employee that would reduce your tax liability but increase your costs due to employers National insurance and extra insurance you would need.
Would you consider employing him and putting him through apprenticeship?

He's not sure if he wants to be a bricklayer and defo won't go the apprentice route I'll need to find out if he can become self employed but thanks anyway .

The best is to employ him and see if he likes it before trying to set him up self employed.
